Instructions
Step 1
Pour 1tbsp olive oil in cast iron skillet
Step 2
Add chicken to heated pan. Spray top with even coating of olive oil
Step 3
Cover chicken in even dustings of garlic powder, basil, thyme, ginger, white pepper, and a light sprinkle of salt in that order
Step 4
Cover chicken in hearty coating of onion powder. Continue cooking until bottom of chicken appears cooked, then flip and repeat steps 3 & 4 on new top
Step 5
Alternate sides until both are golden and crispy. Cut seam through middle to check doneness & determine final cook time, add pad Thai sauce evenly over both sides and continue to cook. Chicken is done when both sides are a mix between crispy and carmelized
Step 6
Serve as main course with lighter cream sauce (with or without pad Thai sauce added), or cut up and add to soup in final minutes of cooking.
