500gminced beef

olive oil
1 tspsalt

1 tspblack pepper
2onions
grated or very finely chopped
2carrots
grated or very finely diced
1celery sticks
very finely chopped
2 clovesgarlic

150mldry red wine
worcestershire sauce
to taste
2 Tbsptomato paste
400gcanned tomatoes
chopped or crushed
1beef stock cube
2chicken stock cubes
1 litrewater
fresh chilli

Step 1

Instructions 1. Heat a generous drizzle of olive oil in a large pan over medium–high heat. 2. Add the minced meat and cook until well browned, stirring occasionally. 3. Season with salt and black pepper. 4. Add the onions, carrots, and celery. Cook until softened and most moisture has evaporated. 5. Add the garlic and cook for 30 seconds until fragrant. 6. Pour in the red wine and simmer for 2–3 minutes until the alcohol cooks off. 7. Add Worcestershire sauce and stir well. 8. Stir in the tomato paste until fully combined. 9. Add the canned tomatoes, water, and stock cubes. Stir until dissolved. 10. Add chilli if using. 11. Reduce heat to low and simmer gently for 1–2 hours, stirring occasionally. 12. Cook pasta in well-salted water, drain, and serve topped with the bolognese sauce. 13. Finish with freshly grated Parmigiano Reggiano. Notes Simmering longer deepens flavor. Grated vegetables give a smooth, rich texture. Add a splash of pasta water when mixing pasta and sauce for perfect coating. Freezes well for up to 3 months.
