Instructions
Step 1
Boil 2 Cups or more water and pour over lentils in a bowl. Let soak 1 hour or until soft enough to process.
Step 2
Preheat the oven to 350°F (175°C). Prepare muffin tins with oil or paper cups.
Step 3
Add lentils, cut apples, vegetable oil, and vanilla extract to a food processor or blender. Blend until well combined and desired consistency.
Step 4
To wet ingredients add flour, sugar, baking soda, cinnamon, and salt.
Step 5
Stir until well combined.
Step 6
Pour the mixture into muffin tins. Makes 45 minis.
Step 7
Bake for 15-20 minutes or until a toothpick comes out clean.
