Instructions
Step 1
Whisk eggs in a bowl with a fork,add water ,salt and turmeric . Heat the pan and spray lightly with olive oil. Add eggs.
Step 2
Add chopped spinach, fresh oregano, thyme, parsley and feta cheese . Turn the broiler on hi. Turn the stove off . Pop the skillet in the oven just long enough for the eggs to fluff up and brown . About 4-5 mins. Take out let sit for 5 mins
Step 3
Top with freshly grated Parmesan cheese and chopped basil . Serve with fresh fruit and bread.
