1 cupsea salt
large grains, to clean the chicken
2 tablespoonsvinegar
onion

4 clovesgarlic

1 handfulfresh coriander

fresh parsley
1 teaspoonground ginger
1 teaspoonground black pepper
0.5 TeaspoonRas el hanout
½ teaspoonground cumin
1 teaspoonturmeric
1 handfulolives
0.5preserved lemon
4 tablespoonsolive oil
½ tablespoonsalt
more or less depending on your preserved lemon if it's very salty or not
Instructions
Step 1
1. Rinse the chicken Using the sea salt, pull apart the skin from the flesh, so that it can better absorb the marinade, and leave in water with vinegar for 15 min
Step 2
2. Put the grated onions, the garlic, the chopped coriander and parsley, the spices, the saffron and the flesh of the preserved lemon in a tajine (or stewpot) and mix well. Place the chicken in the marinade and cover all pieces with it.
Step 3
3. Add half cup of water. Cover and simmer gently for 30 mins. Turn and baste the chicken often. Once the meat is cooked (only when it can be pulled apart easily with the fingers) remove it from the pot and keep warm.
Step 4
4. Reduce the sauce at high heat to thick gravy

5. Rinse the olives.
Step 6
6. Place the chicken pieces back into the tajine/pot.
Step 7
Place the olives and the preserved lemon strips on top of the tajine. Warm up the tajine.
