8 ozrigatoni
regular, whole wheat, or protein pasta
1 lbground Italian sausage
1 lb90/10 ground beef
1 cupyellow onion
diced
4 clovesgarlic
minced
8 ozmushrooms
finely chopped
2zucchini
medium, diced small
3 cupsfresh spinach
roughly chopped
1 ½ cupslow-sugar marinara sauce
1 x 24 ozcan crushed tomatoes
1 teaspoonkosher salt
1 tablespoonItalian seasoning
2 cupsmozzarella
freshly grated
Fresh parsley
minced, for serving
Instructions
Step 1
Cook the pasta

Boil rigatoni until just al dente (1–2 minutes under package directions). Drain well.

Brown the meat

In a large skillet over medium heat, brown the sausage and ground beef.

Add onion and cook until softened. Drain excess fat.

Build the veggie base

Add garlic, mushrooms, and zucchini. Cook 5–7 minutes until softened and moisture cooks off.

Add sauce + spinach

Stir in marinara, crushed tomatoes, salt, and Italian seasoning.

Add spinach and cook 2–3 minutes until wilted.

Combine & bake

Fold in cooked rigatoni. Transfer to a baking dish.
