Instructions
Step 1
Melt the butter in a large pan and gently saute the onion and celery for 10 minutes. Add the garlic and cook for a further 2 minutes.
Step 2
Add the spices to the pan, together with the parsnips and apple and cook for 5 minutes.
Step 3
Add the stock and simmer gently for 20 minutes
Step 4
Add the cream and lemon juice to the pan. Season to taste then blend thoroughly before serving.
