Instructions
Step 1
Cook the beans, drain off cooking liquid, reserving some for the sauce
Step 2
Roast the poblano and anheim peppers, peel the skins after they cool
Step 3
Blend together the poblano peppers, anheim peppers, romesco salsa, lime zest, lime juice, chili powder, and cumin. Add some of the reserved bean juice as needed until a thin sauce forma with the desired consistency
Step 4
In a large bowl, combine the sauce and all other ingredients. Mix to combine
