Step 1
1. Bring water to a boil and add chicken breast, 1 tbsp salt, bay leaves, 1/4 onion, and 2 garlic cloves. Bring down to a simmer and boil for 20-30 minutes depending on size of chicken.

2. Once cooked, shred and put to the side.
Step 3
3. While chicken cooks, roast the poblano pepper and jalapeño (omit if you don’t it spicy) using your preferred method. (Air fry at 390* F for 10 minutes)

4. Let it “sweat” out in a plastic bag, peel the skin, and remove the seeds.
Step 5
5. To a blender add the poblano pepper, Greek yogurt, light mayonnaise, avocado, cilantro, seasonings to taste, jalapeño mustard, and almond milk. Blend well.
Step 6
6. To a bowl, add 4 oz chicken, 1.5 c shredded lettuce, and poblano sauce.
Step 7
7. Air fryer tostadas: Air fry tortillas at 390* F for 4 minutes, flip, and cook for an additional 4 minutes. (The tortilla will fly if you don’t put it under the tray or weigh it down with an air fryer safe dish)
Step 8
8. 1 SERVING: divide the chicken salad amongst 3 air fryer tostadas. Add toppings of choice - I added 28 G queso fresco.
