150ghalloumi
cubed
1can butter beans
drained
1onion
chopped
1carrot
sliced
1red pepper
chopped
2garlic cloves
minced
1 cuptomatoes
chopped, or tomato passata
1 Tbsptomato paste
1 tspsmoked paprika
½ tspdried thyme
or oregano
1 Tbspolive oil
½ cupvegetable broth
or water
salt
to taste
pepper
to taste
Fresh parsley
or thyme, chopped
Instructions
Step 1
Pan-fry halloumi in olive oil until golden and lightly crisp on all sides, then remove and set aside.
Step 2
In the same pan, sauté onion, carrot, and red pepper for 3–4 mins until softened, then add garlic and cook briefly until fragrant.
Step 3
Stir in tomato paste, smoked paprika, thyme or oregano, salt, and pepper, letting the flavours deepen for a minute.
Step 4
Add chopped tomatoes and broth or water, simmering 10–12 mins until the vegetables are tender and the stew thickens.
Step 5
Fold in butter beans and return the halloumi to the pan, gently coating everything in the rich tomato sauce.
Step 6
Adjust seasoning to taste and finish with fresh herbs before serving.
