Step 1
Prep all veggies by dicing really small so they incorporate into the sauce smoothly with small bites. Separate the whites and greens of the green onions to use the tops as garnish later, and the whites in your sauce.
Step 2
Brown your Italian sausage and add in all veg. Let cook down until veggies are soft, careful not to burn.
Step 3
While veggies are sweating down, boil a separate pot of water and add your salt. Once boiling add your pasta and cook according to directions on its package. Drain water leaving a cup set aside. You'll use this in the sauce later.
Step 4
Once veggies are soft, and meat is nice and brown, add your tomato paste and garlic. Let brown for around 30 seconds to one minute.
Step 5
Start incorporating your pasta water small bits at a time, until you get your desired consistency. Add your 1/2 cup of cheese and let simmer, stirring occasionally. Add more pasta water if too thick.
Step 6
Add your cooked noodles into your sauce and transfer to a large baking dish. Cover with remaining cheese and bake at 350° for 5-7 minutes, or until cheese has melted well.
Step 7
Sprinkle green onions on top and serve immediately or cover and refrigerate for leftovers.
