Instructions
Step 1
In a large stock pot, heat the olive oil. Cook the carrots, celery, onion
and garlic until soft, about 7 minutes. Add the chicken stock, chicken
(either baked beforehand or raw), quinoa, lemon juice, bay leave, thyme,
salt and pepper. Bring to a boil and then reduce heat. Cover with lid
and simmer for about 20 minutes. If using baked chicken, I don't add
until the soup is ready. Remove bay leaves. Stir in the baby kale unti
wilted. Season to taste and serve
