Ingredients

4 tspvegetable oil
1onion
finely chopped
1carrot
finely chopped
1rib celery
finely chopped
2cloves garlic
minced
1hot green chili pepper
optional
1mlsalt

250gItalian sausages
casings removed
2 x 28 ozcans whole tomatoes
1 x 19 ozcan navy beans
drained and rinsed
1 cupsodium-reduced chicken broth
1 cupwater
⅓ cupfresh oregano
chopped
1 tspgranulated sugar
Instructions
Step 1
In a Dutch oven, heat oil over medium heat. Cook onion, carrot, celery, garlic, chili pepper (if using), salt, and pepper, stirring occasionally, until softened, about 6 minutes.
Step 2
Increase heat to medium-high; add sausages and sauté for 5 minutes, breaking up with a spoon.
Step 3
Stir in tomatoes, breaking up with a spoon. Add beans, chicken broth, water, oregano, and sugar; bring to a boil. Reduce heat and simmer until slightly thickened, 15 to 20 minutes.
Step 4
Discard hot pepper before serving.
Step 5
If desired, garnish with shavings of Parmesan cheese or drizzle with a touch of extra-virgin olive oil.
