Instructions
Step 1
Pre heat pan on medium low. Finely dice 1 whole onion, 1 red pepper and enough garlic to fill teaspoon, add olive oil and the onion, cook until translucent then add garlic, stir until fragrant then add the red pepper and add whatever seasoning.
Step 2
Once the onion, pepper and garlic are cooked and incorporated add one tin of chopped tomatoes and occasionally stir and cook for 5-10 minutes again season however you like then add a tin of chickpeas and again stir occasionally and cook for a further 5 minutes
Step 3
Crack 4 or however many eggs into the pan without stirring and cover for a few minutes once the eggs start to turn white add cubed feta cheese over top and cover again until all cooked and eggs are cooked to you preference. Finish with whatever green herbs you like and enjoy
Step 4
Optional step, pair it with sourdough toast
