Green Shakshuka over Corn Tortillas

Eggs cooked in onions and greens, placed over charred corn tortillas and topped with cotija cheese, avocado and cilantro. A seriously satisfying meal for breakfast, brunch or dinner.

Step 1
Peel and chop onion and garlic.
Step 2
Heat a large saute pan over medium heat and add a drizzle of olive oil. Add onions and garlic and saute until translucent and fragrant, about 5 minutes.

Add the greens, stock, and a pinch of salt, and cook for another 5 minutes.

Using a spoon, make 8 wells in the greens and crack an egg into each well. Sprinkle each egg with salt and pepper, cover pan with a lid, and let cook until egg whites are set, about 7 minutes.

While shakshula cooks, chop avocado and set aside, and char your tortillas (optional, but highly recommended!) over the flame of a gas stove, turning frequently so they don't catch on fire!
Step 6
Scoop shakshuka and place over 2 tortillas, top with avocado, cotija cheese and hot sauce. Enjoy!
