Ingredients

2 Tbspextra virgin olive oil
2sausages
large, preferably spicy but mild Italian sausage works, too, or 1 package kielbasa spicy sausage, cut into 1 inch slices
1onion
thinly sliced
4 tspgarlic
minced
2green peppers
long, or 2 bell peppers, cubed
2fire roasted red peppers
whole, diced into 1" cubes
1can crushed tomatoes
1 tspdried Greek oregano
pepper
Freshly-ground
red pepper flakes
¼ tspground cinnamon
1bay leaf
1 tspsalt
Instructions
Step 1
Heat the olive oil in a pan on high heat and sauté the sausages for 2-3 minutes until they're golden brown. Remove sausages from pan and set aside for later.
Step 2
Add another tbs olive oil if needed to the pan. Add onion and cook until soft and translucent (about 5 minutes). Add the minced garlic and cook for 1 minute until fragrant.
Step 3
Stir in the crushed tomatoes. Add the oregano, cinnamon, bay leaf, salt, and pepper. Bring the sauce to a gentle boil, then lower the heat to medium-low. Simmer for 10 minutes, stirring occasionally, until the sauce has thickened.
Step 4
Add the sausages back and peppers and mix well. Cover and let the food simmer for about 15 minutes. Add pepper or pepper flakes for a spicier version.
