Soy-Garlic Chicken Thighs (Taiwanese Home-Style)

A simple Taiwanese-inspired chicken dish made with juicy chicken thighs, lightly browned and finished with garlic and soy sauce. Savoury, comforting, and not too saucy — perfect alongside stir-fried vegetables and steamed rice.

1. Prepare the chicken

Pat the chicken thighs dry and season lightly with white pepper.

2. Brown the chicken

Heat a pan over medium-high heat. Add oil and place chicken skin-side down (if skin-on). Cook until golden brown, about 4–5 minutes.

3. Flip and add garlic

Flip the chicken and add garlic to the pan. Stir gently so the garlic becomes fragrant but does not burn.

Add soy sauce and water or chicken stock. Swirl the pan to mix.

Lower heat slightly, cover, and simmer for 5–7 minutes until chicken is cooked through and juicy.

Uncover and let the sauce reduce slightly until it lightly coats the chicken. Taste and adjust seasoning.

Slice and serve hot with vegetables and rice. Garnish with spring onion if using.
