Instructions
Step 1
Preheat your oven to 400°F (200°C).
Step 2
Toss the sweet potato wedges with 2 tsp olive oil, smoked paprika, salt, and pepper.

Spread them on a large baking sheet in a single layer. Roast for 20-25 minutes.
Step 4
While the potatoes roast, sauté the peppers and onions in a pan with the oil until tender-crisp. Add the meatballs at the end just to brown the outsides and heat them through.
Step 5
In a small bowl, whisk together the 4 tbsp Greek yogurt, the juice of 1 lime, and cilantro.
Step 6
Add a pinch of salt and garlic powder. If the sauce is too thick, add a teaspoon of water until it reaches a "drizzle" consistency.
Step 7
Divide the roasted sweet potatoes and veggie mix equally among 4 bowls. Drizzle the Mojo sauce over the meatballs and potatoes.
