Instructions

Step 1
Preheat oven to 175°C (350°F). Line a 9x13 inch pan with parchment paper.
Step 2
Blend oats into fine flour and weigh exactly 200g.
Step 3
Whisk 480g yogurt and 200g eggs until smooth (2 mins). Add 5g vanilla.
Step 4
Dissolve 4g coffee in 1 tbsp hot water, then stir into the wet mix.

Add oat flour, 200g protein powder, 80g cocoa, 12g baking powder, and salt. Mix gently until just combined.
Step 6
Gradually whisk in 240g coconut milk until batter is pourable like thick pancake batter.
Step 7
(Optional) Taste batter; whisk in honey if too bitter.
Step 8
Pour into the pan, spread evenly, and bake 30-35 mins until the toothpick comes out clean.
Step 9
Cool completely in pan for 45 mins before slicing into 32 pieces.
