Lasagna Soup

Instructions

Step 1
In a large pot, heat up olive oil over medium heat. Add in your onion and cook for about 4 minutes. Add in the garlic and cook for about another 30 seconds
Step 2
Add in the Italian sausage and cook for about 2-3 minutes. Top with about half of your seasonings. Then continue to cook until it's no longer pink.
Step 3
Add in tomato paste and stir until it's combined. Then add in your chicken broth, marinara sauce, the rest of the seasonings, and bring to a boil
Step 4
Pour in lasagna noodles, reduce heat to a simmer, and cook for 10 minutes while stirring occasionally
Step 5
Once the noodles are done, add in your heavy cream, ½ cup of the parmesan and Mozzarella cheese, and the fresh basil
Step 6
Stir until cheese is melted. Serve with a dollop of Ricotta and more of the parmesan and Mozzarella cheese on top
