Oatmeal Buttermilk Pancakes

Delicious and hearty pancakes made with oatmeal, buttermilk, and a mix of all-purpose white flour. Perfect for breakfast or as a snack, served with syrup or applesauce.

Instructions

Step 1
Stir together oatmeal and buttermilk until well coated.
Step 2
Stir in beaten eggs.
Step 3
Stir in flour, sugar, baking soda, salt, and oil.
Step 4
Preheat lightly greased griddle. When drops of water dance, reduce heat.
Step 5
Pour batter onto griddle in % cup amounts.
Step 6
Turn once only when bubbles appear in the batter.
Step 7
Cook through and serve with hot syrup and/or hot applesauce and vanilla yogurt.
Step 8
For variety, add sliced bananas or fresh blueberries to the pancakes on the griddle before turning.
Step 9
Note: These even make wonderful snacks when eaten cold and plain.
