Instructions

Step 1
Preheat oven to 180 degrees
Step 2
Halve the potatoes lengthways and cut them into three or four pieces so they look like giant chips
Step 3
Mix the mustard, lemon juice, oregano, and olive oil to make a marinade.
Step 4
Put the chicken, potatoes, onion wedges, bay leaves, and 4 garlic cloves in a large oven dish. Season the potatoes and the chicken (inside and out) with salt and pepper. Put the squeezed lemon halves and the remaining garlic in the chicken cavity.
Step 5
Splash the marinade over the chicken and potatoes, shuffling them so they’re well coated. Gently pour a cup of water into the dish careful not to wash away the marinade.
Step 6
Cover with tinfoil and roast for 1 hour.
Step 7
After an hour, remove the foil. Pour the wine over the chicken, turn the potatoes and onions and roast for another hour.
Step 8
The potatoes should be in a little liquid. Add water if they’re drying out. If the potatoes need longer once the chicken is done then transfer chicken to warmed serving platter.
