Instructions
Step 1
Add sausage, onion, mushrooms, and olive oil to pan on medium high heat. Soften veggies.
Step 2
Throw pan mixture into instant pot with broth, potatoes, garlic, oregano, salt and pepper. Cook on instant pot, high pressure, for 6 minutes, QR, unplug instant pot.
Step 3
Toss in 1 bunch of kale. Be sure to cut the kale into smaller pieces. Stir, reseal, 5 minutes.
Step 4
Stir in 1 cup half and half or heavy cream.
Step 5
Serve.
