Instructions
Step 1
Put a frying pan on a low heat with oil and put your minced garlic while that's cooking Carve out the avocado and mash it up with a fork then set aside, chop up the spring onions into small pieces and mix with the avocado, then slice up the tomato and feta, when the garlic is softened remove from the pan and mix with the avocado mixture, the crack 2 eggs and whisk, pour into a medium hot pan and cook, (sprinkle grated cheese if you wish) Fold the omelette and place on your bagel ( I toasted mine) then layer as you wish, I went omelette avocado then tomato then feta
