Instructions
Step 1
Clean the artichokes thoroughly and cut them into quarters. Place them in salted water.
Step 2
Drain the artichokes, coat them in flour and fry them.
Set aside and reserve
Step 3
Shell the peas and set aside.
You can replace it by frozen peas.
Step 4
Salt the monkfish and add a few drops of lemon. Coat it in flour, fry it and set aside.
Step 5
Put oil in a saucepan, then stir-fry the spring onion and young garlic, both finely chopped.
Step 6
Halfway through frying, pour in a glass of white wine. A few minutes later, add the broth or stock.
Step 7
Add the shelled peas, a few sprigs of saffron and season with salt and pepper. Cook for about twenty minutes.
Step 8
When the peas are cooked, add the monkfish slices and the artichokes. Let it simmer a little longer and the dish will be ready.
