Instructions

Step 1
Cook lentils until just tender (not mushy). Drain well.
Step 2
Sauté onion + garlic until sweet (5–8 min). Cool slightly.
Step 3
In a bowl: mash about 1/2 the lentils with a fork (this is key for binding), keep the rest whole.
Step 4
Mix in onion/garlic, spinach, finely chopped sun dried tomatoes, crumbled feta, egg, tahini/yogurt, seasonings.
Step 5
Add flour 1 Tbsp at a time until it holds shape. Rest 10 min.
Step 6
Form patties (about 1/3 cup each). Chill 15–30 min if you can (firms up).
Step 7
Add the last ingredients to make the sauce
