For the beef
1 lbground beef
grass-fed
2 Tbspworcestershire
1 Tbspdijon mustard
1egg yolk
1 tspOnion powder
1 tspgarlic powder
salt
ground black pepper
to taste

Instructions
Step 1
Heat oil in a large skillet over medium-high heat. Sauté onion and mushrooms in hot oil until onion begins to soften, about 5 minutes. Season vegetable mixture with salt and pepper and dried thyme; continue to sauté until onions and mushrooms brown, about 5 minutes more. Add a dash or two of Worcestershire sauce, if desired.
Step 2
Mix to combine the ingredients for the beef and form the patties. You can make 4 large patties, or I prefer to make 8 smaller ones.
Step 3
Cook burgers until they are firm, hot in the center, and just turning from pink to grey, 8 to 10 minutes per side for medium well.
Step 4
Whisk mayonnaise and Sriracha sauce together in a bowl until aioli is smooth. Spread aioli on each hamburger bun. Place a beef patty on the bottom bun, top with a slice of Monterey Jack cheese, one quarter of the onion-mushroom mixture, ¼ cup arugula, and cover burger with the top bun. Repeat with remaining burgers.
