Ingredients
4 servings
0.5lemon
Lemon zest strips from
2 tlblemon juice
5garlic cloves
minced fine, 3+2 separated
1sweet onion
medium, rough chop
1orange pepper
medium, or red, rough chop
1 pkgchicken sausage
sliced into half moons
1can diced tomatoes
small, fire roasted was tasty
1can lentils
small, easy cheat, roughly if you are cooking them
2 cupschicken stock
2 Tbltomato paste
2 tspcumin
2 tspred pepper flakes
alepo
1 Tbloregano
salt
to taste
Grated parmesan cheese
for topping
Instructions
Step 1
If you are making your own lentils, start that first… they take 45 min. Get that going while you chop etc.
Step 2
Dice lemon zest strips fine, mix with 3 of your minced garlic, add lemon juice and set aside (this gets mixed in right before serving).
Step 3
Brown sausage, add onions on top while the sausage browns. Add your dry spices and some salt. Cook until onions change color.
Step 4
Create a hole, add your tomato paste, stirring to get some browning on the tomato paste. Create another hole, add a bit of oil and add your remaining garlic. Once the garlic is fragrant, mix everything so that your garlic doesn’t brown (bitter). Deglaze your pan with chicken stock and add your diced tomatoes and lentils. Cook to bring everything up to temperature. Stir in your lemon/garlic/lemon-juice and mix in. Add salt to taste.
Step 5
Serve topped with grated parmesan.
Step 6
You could add other vegetables such as asparagus. You could also use cannellini beans rather then lentils
