Ingredients
5 servings
1 lbsroast beef
or stew, cut into cubes
3 Tbspolive oil
or butter
2 Tbsptomato paste
0.5yellow onion
1garlic clove
minced
0.5 bagbaby carrots
0.5bell pepper
I used a red one
1 cupportobellos
sliced
1 Tbspground paprika
½ cupred wine
1 containerbeef broth
2beef bouillon cubes
0.5 Tbspparsley
0.5 Tbspthyme
½ cupall purpose flour
to thicken
salt
to taste
pepper
to taste
Instructions
Step 1
- In a large pot, brown the beef with olive oil or butter over high heat, until cooked through. Then stir it and let the edges brown slightly.
Step 2
-Pour the meat into a separate bowl, and add chopped onion, sliced mushrooms, and chopped bell pepper and sauté until the onions become translucent.
Step 3
- Next, sprinkle flour into the mixture of veggies, and add beef broth. Then add the meat back in, sliced potatoes, & carrots.
Step 4
- Next, bring the broth to a boil for a couple minutes, and then turn the heat to 2.5/ low put the lid on the pot for about 1 and a half hours or until the meat is tender and the potatoes are cooked through.
Step 5
- Adjust the seasoning or the thickness as needed.
Step 6
- Serve & top with parsley:)
