Cheesy Chorizo Chicken and Spinach

This cheesy and satisfying dish combines chorizo, chicken, and spinach with melted mozzarella. It's simple to make and can be served in just a few minutes.

Instructions

Step 1
Heat the coconut oil in a large frying pan over medium to high heat.
Step 2
Add the chorizo and fry for a minute.
Step 3
Add the onion and fry for another minute.
Step 4
Increase the heat to maximum and add the chicken, along with a generous pinch of both salt and pepper.
Step 5
Stir-fry for about 3 minutes, or until the chicken is almost completely cooked through.
Step 6
Throw in the cherry tomatoes and cook for a minute or until they just begin to collapse.
Step 7
Toss in the spinach and stir through until fully wilted.
Step 8
Use a wooden spoon to make little pockets in the chicken and vegetable mixture, then drop in small chunks of the mozzarella.
Step 9
Turn off the heat and let the mozzarella melt before spooning the whole delicious lot onto a plate and scattering over the pine nuts.
