This is an easy and delicious recipe that is great for using up leftover roasted chicken and whatever vegetables you have in your kitchen. I used the ingredients we had and the combination was a delight!

Step 1
Heat oil in a large heavy skillet on med/high heat

saute onion cauliflower for 5 minutes, until veg begins to soften
Step 3
add remaining ingredients and stir-fry for another 5 minutes. Scoop into 2 large bowls and serve immediately.
