Instructions
Step 1
Bring a medium saucepan of water to the boil.
Step 2
Mix ½ tsp cornflour & 60ml (¼ cup) water in a bowl.
Step 3
Add garlic, hoisin, soy & vinegar to bowl, stir & season with pepper.
Step 4
Thinly slice spring onion.
Step 5
Thickly slice pak choy stems, keeping the leaves whole.

Slice capsicum

Cut the chicken into 2cm chunks.
Step 8
Add noodles to boiling water, cook for 6 mins.
Step 9
Heat 2 tbs olive oil in a medium frypan over medium-high heat.
Step 10
Add seasoning, cornflour, salt & pepper in medium freezer bag. Hold shut & shake to mix well.
Step 11
Add chicken to bag, hold shut and shake to coat.
Step 12
Add pak choy stems to noodles, boil another 2 mins till noodles & pak choy are just tender.
Step 13
Sauté capsicum until just tender. Remove from pan.
Step 14
Spray both sides of chicken with vegetable oil .
Step 15
Cook chicken, stirring, for 3-5 mins until golden, crispy & cooked through

Drain pasta. Rinse under cold water to prevent noodles sticking. Return to saucepan.
Step 17
Add pak choy leaves, capsicum & hoisin mix.to noodkes.
Step 18
Cook on medium tossing 1-2 mins till sauce clings to noodles.
Step 19
Remove from heat. Taste, then season with salt and pepper if desired

Divide noodle mix info 2 bowls. Scatter chicken on top.

Sprinkle with parsley & spring onion. Enjoy!
