2 tspgaram masala
2 tsppaprika
smoked if you have it
1 tspcumin
1 tspturmeric
1 tspchili powder
or cayenne, to taste
1 tspsalt
1 Tbspolive oil

Instructions
Marinade
Step 1
In a bowl, mix: • Greek yogurt, lemon juice, garlic, ginger, all spices, salt, and olive oil
Step 2
Add chicken thighs and coat thoroughly.
Step 3
Cover and marinate: • Minimum: 30 minutes • Best: 4–12 hours • (Overnight = elite flavor)
Grill
Step 4
Preheat grill to medium-high (about 400–450°F).
Step 5
Oil the grates well (yogurt marinades like to stick).
Step 6
Grill thighs 5–7 minutes per side, lid closed.
Step 7
Cook until: • Internal temp hits 175–185°F (thighs love higher temps) • Nice char on the outside
Step 8
Rest 5 minutes before slicing.
