Step 1: Marinate the chicken. Cut up 2 to 3 chicken breasts and put in a bowl. Add a teaspoon of salt, half a teaspoon of Kashmiri chili powder, a pinch of turmeric, half a tablespoon of ginger garlic paste, and a teaspoon of lemon juice. Mix well.

Step 2: Sauce the chicken. In a bowl, combine 2 tablespoons of mustard oil, 1 tablespoon of Kashmiri chili powder, and half a teaspoon of cumin.

Step 3: Make the makhani gravy. Roughly chop 5 small tomatoes, 50 grams of cashews, 6 peeled garlic cloves, 1 inch of ginger, and 1 green chili. Add coriander stems or powder, 4 cardamom pods, 6 cloves, 2 sticks of cinnamon, and 3 bay leaves. Heat in a pan, add 2 tablespoons of oil or butter, half a teaspoon of salt, and half a tablespoon of Kashmiri chili powder. Cook, adding water if dry. Cover and cook for 15-20 minutes.

Step 4: Cook the chicken. Grill the chicken until it is fully cooked.

Step 5: Bring it all together. In a pan, melt 3 tablespoons of butter, add 1 tablespoon of Kashmiri chili powder and cook for 20 seconds. Add ginger julienne, the makhani gravy, and grilled chicken. Cook for 3 to 4 minutes, then add a teaspoon of sugar or honey, salt as needed, a third of a teaspoon of kasoori methi powder, and 4-5 tablespoons of cream.
