These Arayes are my plant-based take on the classic ground beef Lebanese stuffed pita. Made with a seasoned lentil kofta filling, then pan fried or baked until crispy. Paired with a creamy herby tahini sauce that pulls everything together. Think comfort food energy, but fiber-forward and protein-rich.
