Instructions

Step 1
In a large, deep skillet or Dutch oven, heat oil/butter over medium-high heat. Add the sliced sausage and cook until well-browned. Remove the sausage and set aside, leaving the fat in the pan.
Step 2
In the same deep skillet or Dutch oven, add chicken thighs and cook until well-browned. Remove the chicken and set aside, leaving the fat in the pan.
Step 3
Add the diced onion and bell pepper to the same pan. Sauté for 3-5 minutes until softened and scraping up any browned bits from the sausage. Add the garlic and cook for another minute.
Step 4
Add the diced potatoes to the skillet. Season with Cajun seasoning, onion powder, and pepper. Stir well to coat the potatoes in the fat and spices.
Step 5
Pour in the chicken broth and (if using) the liquid crab boil. Bring to a simmer, then reduce heat to low, cover with a tight-fitting lid, and cook for 15-20 minutes, or until potatoes are fork-tender. Stir occasionally to prevent sticking.
Step 6
Remove the lid and stir in the shrimp and cooked sausage. Cover again and cook for another 3-5 minutes, or until the shrimp are pink and opaque.
Step 7
Taste for seasoning, adding more Cajun seasoning or salt if needed. Garnish with chopped green onions or parsley.
