Instructions
Step 1
Sauté onion, bell pepper and garlic with a spritz of olive oil until translucent.
Step 2
Add carrots and bone broth. Bring to a gentle boil.
Step 3
Add canned tomatoes and tomato sauce.
Step 4
Remove from heat and add herbs, seasonings.
Step 5
Place in a blender or use immersion blender and blend until smooth.
Step 6
Add pumpkin and milk and combine until mixed.
Step 7
Serve and top with oregano. Garnish with Greek yogurt, croutons or your favorite toppings.
