Creamy salmon with spinach

Instructions

Step 1
Preheat the oven to 200 °C (top and bottom heat).
Step 2
Place the salmon in an ovenproof dish. Season lightly with salt and pepper.
Step 3
Finely chop the garlic (1–2 cloves) and spread over the salmon.
Step 4
Mix the cream and/or crème fraîche in a bowl (e.g. 2 dl cream + 1 dl crème fraîche for extra richness).
Step 5
Add a little lemon juice (approx. 1–2 tsp) to the cream mixture, season with salt and pepper.
Step 6
Pour the sauce over the salmon in the dish.
Step 7
Spread the spinach over and around the salmon (fresh or frozen - frozen can be added straight in).
Step 8
Bake in the middle of the oven for approx. 20–25 minutes, until the salmon is cooked through and the sauce is bubbling slightly.
Step 9
If desired, season with a little extra lemon or pepper before serving.
Step 10
Serve with cooked pasta and roasted broccoli and carrots.
