Instructions

Step 1
Heat olive oil in a large saucepan over medium heat. Sauté onion and garlic for 5 minutes.
Step 2
Add carrots, cumin, and paprika. Stir for about 2 minutes.
Step 3
Pour in tomatoes, cannellini beans, and stock. Simmer for 20-25 minutes until carrots are soft.
Step 4
Season with salt and black pepper to taste and garnish with herbs. Serve with crusty wholemeal bread if desired.
