Step 1
Marinate chicken with lots of patis, calamansi, salt, pepper, sugar, some water

Put chicken in water with chicken cube, remaining marinade, bay leaf, pepper, onion, garlic. GENTLY SIMMER. DO NOT BOIL OR SIMMER, BEC THE SKIN WILL BREAK

Pat dry, air dry in front of electric fan, put in ref
Step 4
Bring to room temp in front of fan. FRY but do not over cook or else the chicken will be hard to bite
