Instructions
Step 1
Preheat oven to 350°F (175°C).
Step 2
In a large baking pan, add the sliced onion and cubed potatoes (if using) and spread them evenly on the bottom.
Step 3
Add the chicken legs to the pan.
Step 4
In a bowl (or directly in the pan), mix together the pomegranate molasses, olive oil, and spices.
Step 5
Coat the chicken and vegetables well with the mixture, making sure everything is evenly covered.
Step 6
Arrange the vegetables on the bottom of the pan and place the chicken legs on top.
Step 7
Cover the pan tightly with foil and bake for 45 minutes.
Step 8
Remove the foil and bake for an additional 20 minutes, or until the chicken is golden and slightly caramelized on top.
Step 9
Optional: Broil for 2–3 minutes at the end for extra crispiness.
Step 10
Serve hot with vermicelli rice.
