Step 1

Boil full kettle.
Cut the tenderstem broccoli into thirds.
Pour the boiled water into a saucepan with 1/2 tsp salt. Bring back to the boil.
Halve the chilli lengthways, deseed, then finely chop.
Step 2

Boil the tortelloni and broccoli, 3-5 mins.
Meanwhile, heat a frying pan on mediul-high heat.
Once hot, add the chilli, passata, red wine stock paste, sugar and water.
Simmer. 2-3 mins.
Step 3

Reduce the heat. Stir through the butter.
Drain the tortelloni and broccoli.
Step 4

Gently stir the pasta, broccoli and hard italian style cheese into the sauce.
Add a splash of water if you feel it needs it.
Share between bowls.
Top with the rocket, drizzle over the balsamic glaze to finish.
