Chocolate Cloud Bars

Here's a great way to use up some extra liquid egg whites. I've modified my Cloud Bread Loaf to make what's essentially a healthy angel food cake bar. This healthy dessert is an accidental protein bar without any protein powder, as well as being low in net carbs, low in fat, and high in fiber

Instructions
Step 1
Preheat your oven to 350F. Line a 9" square baking pan with parchment paper, and lightly spray with oil
Step 2

In a very large metal bowl, bean your egg whites with lemon juice until stiff peaks form, at least 5 minutes
Step 3
Beat in the liquid monk fruit, vanilla, cinnamon, baking powder, and salt on low speed
Step 4

Lightly fold in the carob powder and powdered peanut butter, trying to deflate the mixture as little as possible
Step 5

Transfer the raw batter to the pan
Step 6

Bake at 350F for 30 minutes. Without opening the door, turn off the oven, and let it sit in there for 15 minutes. Remove from the oven, and allow it to cool on a wire rack
Step 7

Slice into 9 bars, and store in the fridge. I wouldn't recommend freezing these
