Step 1
Preheat the oven to 325°F/165°C.
Step 2
Boil the corned beef in water for 1 minute. Drain and repeat at least one more time.
Step 3
Mix the honey and salt together and coat the corned beef.
Step 4
Wrap the corned beef in aluminum foil and set in a dish or roasting pan. Roast in the oven for approximately 1 hour per pound (4 hours total for 4 lbs). 30 minutes before it is finished, open the foil to let darken.
Step 5
For the cabbage, quarter the cabbage and slice thinly, dice the onion, and slice the leek into rounds, making sure to rinse the rounds thoroughly to remove all the dirt. Place all of the ingredients in a pot and bring to a boil on the stove. Reduce to a simmer and cover. Let cook for 25-30 minutes.
