​Oven: If you don't have a smoker, set your oven to 400°F (200°C) on convection mode.Arrange wings on a wire rack over a baking sheet. Cook for 45–55 minutes, flipping halfway through, until the skin is crispy and the internal temperature reaches 175°F–180°F (wings need higher heat than breast meat to render the fat under the skin).
