Step 1

Prep: Pat the wings completely dry with paper towels. This is critical for crispy skin.
Step 2

Season: Toss the wings in a bowl with the rub until evenly coated. Let them sit for 30 minutes to allow the salt to pull moisture out and help the rub adhere.
Step 3

Smoke/Roast:
Smoker: Cook at 350°F (177°C) using oak or pecan wood.
Oven: If you don't have a smoker, set your oven to 400°F (200°C) on convection mode.Arrange wings on a wire rack over a baking sheet. Cook for 45–55 minutes, flipping halfway through, until the skin is crispy and the internal temperature reaches 175°F–180°F (wings need higher heat than breast meat to render the fat under the skin).
Step 4

Serve hot with a side of BBQ sauce just before serving.
