Instructions
Step 1
In a large pot over medium heat, cook the Italian sausage until browned and crumbly (about 6–7 minutes).
Step 2
Add:
onion
Garlic
Olive oil
Cook 5 minutes until softened.
Add garlic and cook 30 seconds.
Step 3
Add:
paprika
oregano
Cumin
Red pepper flakes
Cook for one minute
Step 4
Add crushed tomatoes
chicken broth
lentils
sweet potatoes
Rind from Parmesan cheese
Bring to a gentle boil. Reduce heat and simmer for 20 minutes.
Step 5
Add the following beans but reserve a portion to puree:
Chickpeas Black beans
Kidney beans
Bring soup to boil and reduce to simmer
Step 6
Simmer 10–15 more minutes until lentils and sweet potatoes are tender. Puree a portion of the beans and cheese. Add mixture back into the pot and stir. Add remaining beans and carrots. Taste and adjust salt and pepper.
