Lemon Chicken Orzo Soup

Ingredients
6 servings
1 lbboneless skinless chicken breast
diced
1 Tbspolive oil
1 cupCarrots
diced
1 cupCelery
diced
1Yellow onion
small, diced
3 clovesgarlic
minced
1 cuporzo pasta
Uncooked
6 cupschicken broth
2Lemons
large, juiced
1 tspdried oregano
½ tspsalt
½ tspBlack pepper
2 cupsFresh spinach
roughly chopped
2 TbspFresh dill
or parsley, chopped
Instructions
Step 1
1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add diced chicken and brown for 3-5 minutes.
Step 2
2. Add carrots, celery, and onion to the pot. Sauté for 5 minutes until vegetables begin to soften. Stir in minced garlic and oregano; cook for 1 minute.

3. Pour in the chicken broth and bring the mixture to a boil.
Step 4
4. Stir in the uncooked orzo. Reduce heat to medium-low and simmer for 10-12 minutes, or until the orzo is tender.
Step 5
5. Stir in the spinach and let it wilt (about 1 minute).
Step 6
6. Remove from heat. Stir in the lemon juice and fresh herbs. Season with salt and pepper to taste.
