Step 1
Place the ginger, cloves, lemon grass, nutmeg, cinnamon stick, bay leaf, lime zest, salt, creamed coconut and water in a large, heavy-based pan and bring slowly to the boil.
Step 2
Add the rice, stir well, then cover and simmer, over a very gentle heat, for about 15 minutes or until all the liquid has been absorbed and the rice is tender.
Step 3
Remove from the heat and leave covered for a few minutes, then fluff with a fork. Discard the aromatics (lemongrass, cinnamon, bay leaf) before serving if desired.
