Instructions
Step 1
Heat olive oil in large pot on medium high heat, then sauté carrots and celery for about 4 minutes or until mostly soft.
Step 2
Add ginger stirring for about 1 minute.
Step 3
Add chicken and cook stirring, until chicken is mostly turned white.
Step 4
Add the chicken stock and turmeric, stir to combine. Bring to the boil, reduce heat and simmer with lid on for 20 minutes.
Step 5
Add zucchini and risoni, stir through,then simmer for a further 15 minutes.
Step 6
Add salt to taste and a sprinkle of fresh thyme. Serve with sourdough bread.
