Instructions

Step 1
1. Sprinkle beef with salt and 1 teaspoon of pepper. Heat oil in large skillet or Dutch oven over high heat until shimmering. Add beef; cook undisturbed, until browned on 1 side, about 6 minutes. Flip, and cook until browned on other side. 4 to 5 minutes.

2. Place beef in a 5 to 6 quart slow cooker. Add onion soup mix, beef stock, Worcestershire sauce, garlic and remaining 1/2 teaspoon of pepper. Stir to dissolve soup mix. Cover and cook on low until beef is fork tender, 7 to 8 hours.

3. Transfer beef to a cutting board; let stand until cool enough to handle. Shred using 2 forks. Pour cooking liquid through a fine mash strainer into heat proof bowl; discard solids. Reserve liquid for dipping.
Step 4
4. Preheat oven to broil with rack about 6 inches from heat source. Arrange rolls, cut sides up, on a broiler safe baking sheet. Spread butter over cut sides of rolls. Broiler until toasted, 3 to 4 minutes.
Step 5
5. Place 1 cup of beef on each toasted roll. Top with provolone cheese and sautéed onions. Broiler until cheese melts, about 2 minutes. Serve with reserved jus for dipping.
